I love making appetizers. And these mini taco appetizers are always a huge hit. They are an easy appetizer to make for entertaining, potluck or a lazy Sunday at home watching the game.
I like to make a double recipe of these mini tacos to set out for our summer barbecues. They keep hungry fingers from getting into the other dishes before our meal is ready.
You can use a store bought packet of taco seasoning or use our recipe. To save time, you can make the taco meat up a day or two before it is needed.
I have even cooked up a batch of taco meat and frozen it for those days when we want to snack instead of cook. We just defrost the meat and these mini tacos come together quickly so we can get back to

- 1 bag Organic tortilla chips scoopable -you will need about 2 dozen
- 1 pound Organic ground beef
- 1 pkg Organic taco seasoning or 1 cup home-made seasoning
- 1/4 cup Organic water
- 1/2 cup Organic cheddar cheese shredded mild
- 1-1 1/2 cups Organic sour cream
- 2.25 oz Organic black olives diced
- 1/4 cup Organic green onions finely chopped
- 1/4 cup Organic cilantro finely chopped

- Preheat oven to 325º.
- Mix together the green onion and cilantro into a small bowl.
- Brown ground beef or turkey and then drain off any excess grease. Return meat to pan and then add taco seasoning and stir, slowly stir in water.
- Simmer meat and taco seasoning for 5 minutes stirring occasionally.
- Arrange tortilla chips on a baking sheet.
- Spoon in seasoned ground beef and sprinkle with cheese.
- Bake for 5 or so minutes until cheese is melted.
- Spoon a dollop of sour cream on each tortilla chip.
- Put about 1-2 black olives on each tortilla chip.
- Sprinkle combination of green onion and cilantro on top of all the filled tortilla chips.
- Arrange on a platter and serve.
