This Grapefruit Salad with Champagne Vinaigrette is not your ordinary salad. Loaded with flavor and texture, it is a delicious starter or a meal all by itself.

The different textures and the bright, tangy grapefruit, crunchy walnuts and creamy blue cheese combine with the vinaigrette to create a gorgeous as well as delicious salad.

- 6-8 cups Organic arugula
- 1/4 cup Organic radicchio
- 1 Organic shallot finely diced, divided
- 1 Organic red grapefruit small
- 1/4 cup Organic walnuts optional
- 1/4 cup Organic blue cheese optional
- 3 Tbsp Organic black sesame seeds optional
- 1 Tbsp Organic shallot reserved from salad
- 1 Tbsp Organic garlic minced
- 1/4 cup Organic champagne vinegar
- 1/2 Organic lemon juiced
- 1/2 cup Organic olive oil
- 3 Tbsp Organic honey
- 3/4 tsp Organic salt
- 1/2 tsp Organic pepper
- 1/4 tsp Organic cayenne pepper

- In a salad spinner or a strainer, wash and strain the arugula and place in a large mixing bowl.
- Thinly slice the radicchio and add to the arugula.
- Finely dice the shallot. Reserve 1 tablespoon for the vinaigrette and then add remaining shallot to the salad.
- Use a sharp knife to peel the grapefruit, making sure to remove all of the membrane. Cut out the natural sections and slice into thirds. Add grapefruit to salad.
- Using tongs, mix the salad to incorporate all the ingredients.
- If desired, you can dress the salad with vinaigrette prior to serving. I typically add 1/2 cup of vinaigrette to the large salad, tossing well to incorporate the vinaigrette and then serve the remaining vinaigrette on the side.
- In a small bowl, add all of the ingredients and whisk well. Pour dressing into a cruet or dressing bottle if desired.
- To serve, add salad to serving bowls and sprinkle walnuts, blue cheese, and sesame seeds on top of each serving. Serve salad already dressed with vinaigrette or serve it on the side.
