In the last week, one day it was 97° and stormy and the next day it was 60°. Welcome to Autumn in the Midwest. On top of our lovely weather, it is allergy season and I am one of those unlucky folks who suffers from seasonal allergies. I walk around with what feels like a bad cold because my head hurts and I can’t breathe. I just want to curl up in my pajamas and stay in bed. But since I can’t, I need to feel better and nothing to me says medicine, like Grandma’s chicken rice soup.
Chicken soup of any kind is one of those family favorites, and it never matters what time of year it is. Soup is a comfort food with wonderful, healing properties that just makes you feel better.
When I make this chicken rice soup, I always make extra. I store it in the freezer for times when I do not want to cook and want something warm and comforting. All I have to do is pull some out of the freezer and heat it up.
Frozen soup is perfect to give to a neighbor or a friend when they are sick or need a hand.

- 16 cups Organic chicken stock homemade recipe is in the notes below
- 2 cups Organic celery diced
- 2 cups Organic carrots peeled and diced
- 1 Organic zucchini diced
- 2 Organic leeks white parts only, diced
- 1 Organic yellow squash diced
- 4 cups Organic chicken shredded
- 2 1/2 cups Organic rice
- 1 tbsp Organic parsley flakes
- 3 tbsp Organic salt
- 2 sprigs Organic thyme fresh or 1 tbsp dried, which is the dried equivalent
- 1 1/2 tsp Organic black pepper

- Put the chicken stock in a large soup pot.
- Add the shredded chicken, spices and vegetables to the pot.
- Before adding the rice to the soup, rinse the rice with water in a colander, until the water runs clear. You want to do this to remove all the excess starch from the rice. Add rinsed rice to the pot.
- Bring to a low boil and then turn down the heat. Let simmer for 60 minutes or until the rice is thoroughly cooked.
- If you are freezing your soup, let it cool completely before storing in the freezer.
