Caprese Bites

Imagine a caprese salad in just one bite? Yum!

These Caprese bites are light and refreshing making them the perfect appetizers for hot summer days and nights.

We have fresh grown organic basil and cherry tomatoes from the garden just coming in and I have to laugh.  It is all so manageable right now, but I know that in a month it will be like every year, it becomes a frantic race trying to figure out what to do with all the tomatoes. If you don’t have a garden, the Farmer’s Markets have started up, so you can find fresh ingredients there if you wish. These are one of my favorite recipes because with a few ingredients you can put these together in no time at all. Serve them with a drizzle of olive oil and salt or a balsamic vinegar glaze or enjoy them all by themselves.

Instructions
  1. Wash the tomatoes and pull of green tops, if any
  2. If you bought larger mozzarella, cut it into pieces just a bit smaller than the tomatoes
  3. Take the fresh basil and cut the leaves in half (if necessary depends on how big the leaves are) and wrap them around the piece of mozzarella
  4. Take an extra long toothpick and insert one tomato, the cheese with basil wrapped around it and then another tomato
  5. Optional toppings are a drizzle of olive oil and a sprinkle of sea salt or a balsamic glaze
  6. It is honestly that simple and yet incredibly delicious
Recipe Notes

For a balsamic glaze, take 1 cup of organic balsamic vinegar and 1 tablespoon organic sugar heat in a small saucepan until reduced by half about 15-20 minutes. Let cool
