Breakfast Berry Parfaits

Sweet and tangy, these Breakfast Berry Parfaits are beautiful treats with layers of lady fingers, berries and cream. They are also very easy to make which makes them perfect for any time you need a light refreshing treat.

With no baking or cutting, these parfaits are a great first recipe for kids. Staying true to their personalities, one of our sons breaks up the lady fingers and my oldest daughter is always in charge of the equally important job of layering.

I love that they can make a complete recipe with my supervision. They are always so proud of themselves and want to try other recipes. Of course, we are still working on the business of cleaning up, but one step at a time.

I like to make planning easy for them. So around my birthday and Mother’s Day, somehow, all the ingredients for these parfaits can always be found in our refrigerator.

Instructions
  1. Break lady fingers into small pieces. Set aside.
  2. Mix yogurt and non dairy whipped topping together. Set aside.
  3. Combine berry jam and orange juice, stirring until completely combined. Set aside.
  4. Assemble parfaits: In each serving glass, place several small pieces of the lady fingers. Spoon 1-2 tablespoons of berry jam mixture over the lady fingers. Layer with 1/3 cup of the yogurt mixture and with 1 tablespoon of berries. Repeat layers until serving glass is full.
  5. Cover securely with plastic wrap and refrigerate to chill for at least one hour.
  6. If desired, when serving, top with additional non dairy whipped topping, berry jam mixture and sliced berries.
