- 12 oz Organic bacon need 12 regular slices total, do not use thick cut bacon. If gluten free - use gluten free organic bacon
- 24 Organic dates whole, pitted medjool dates
- 4 oz Organic goat cheese plain
- toothpicks

Instructions
- Slice raw bacon in half. Par cook the bacon in a 400° oven, about 6-7 minutes.
- While the bacon is cooking, pit and clean the dates as necessary.
- Fill the dates with 1/4-1/2 teaspoon of the goat cheese and set aside.
- When the bacon is par cooked, remove from the pan and allow to cool enough to be handled, about 3-5 minutes.
- When the bacon is cool enough to be handled, wrap each filled date with one of the half slices of bacon. Secure with toothpicks.
- Bake in a 400° oven, turning every few minutes to crisp all sides, until bacon is completely cooked. If you desire extra crispy bacon, switch your oven to low broil for the last few minutes, turning frequently and keeping a close eye on the bacon so that it does not burn.
- Remove from pan onto paper towels to drain any excess oil and cool.
- Remove toothpicks and serve immediately.
